POTATO CAKES

Ingredients:

800 gms large sized potatoes,
2 Onions,
2 Eggs, 
3tbs Oil,
Coriander leaves,
Salt, 
Pepper

Method:

Peel, wash and grate the potates.
Wash and coap the coriander leaves.Put the potates, onion and coriander leaves togeather in a bowl.
Add the 2 eggs, salt and pepper. Mix together well, form into 4 or 8 cakes.

Heat the oil in a frying-pan and put in the potato cakes. Move them from time to time over to fry on the other side. Slide them onto a dish and serve immedately. 

Cooking time :15 minutes.
